This is a Mexican stewed beef with a very rich and meaty flavor. It’s spicy too which makes it better. Takes a long time to cook but the result would be very promising to your stomach. Can be used as taco, quesadilla, sandwich, ramen and a whole lot more! Give it a try. Happy cooking!

3 lbschuck roast

3 Tbspolive oil

1.5yellow onion
large, halved

20garlic cloves

1carrot
cubed

10bay leaves

12guajillo chilies

4cinnamon bark

5 Tbspmexican dried oregano

8 Tbspcumin

6 Tbspchili powder

3 literswater

2beef broth cubes

salt
to taste

pepper
to taste

Instructions
Step 1
Cut the meat in large cubes and season with salt and pepper.

Step 2
Sear the meat for 4-5 minutes both sides. Set aside.

Step 3
Roast the onion, garlic, carrots, and guajillo chilies in a pan until charred.




Step 4
Transfer your roasted vegetables (onion, garlic, carrots, guajillo chillies) in a pot. Add in the cinnamon barks, bay leaves, dried oregano, cumin, chili powder, and beef broth or beef cubes.









Step 5
Let it boil and simmer for 15 minutes. Using your blender, blend everything together until you get a smooth texture. Strain to remove some big pieces.
Step 6
Place meat in a slow cooker and add in the sauce. Make sure every piece of meat is covered with the sauce.
Step 7
Set the slow cooker into low setting and cook for 8 hours.
Step 8
When the meat is ready and tender. Shred it with a fork and it should break easily.
Step 9
Boil the ramen noodles or egg noodles of your choice. Transfer it to a bowl.

Step 10
Add in your birria broth. Place your birria meat on top. And lastly top it off with diced white onion, cilantro and some lime.





Step 11
Squeeze some lime for tastier broth.
