Instructions
Step 1
Heat sesame oil in a large pan or wok over medium heat
Step 2
Stir in the onion, and cook until soft and translucent, 3-5 minutes

Add the bell pepper, and continue to cook for 3-5 more minutes, until softened.

Stir in curry paste and cook for 1 minute
Step 5
Pour in coconut milk and slowly bring to a simmer
Step 6
Once coconut milk is simmering, stir in monkfish, and simmer for 7-10 mins, or until the fish is firm and the centre is no longer opaque. .
Step 7
Stir in fish sauce, lime juice and coriander before serving.
