Step 1
In a medium bowl, combine the spinach, vegetables, cottage cheese, and other cheeses. In another bowl, beat the eggs, milk, cumin, pepper, and chili powder. Stir in the roasted green chili. Add the egg mixture to the spinach-veggie mixture and stir. Pour into a casserole dish and bake for 25 minutes at 375-degrees.
