Instructions

Step 1
Season the chicken with salt and pepper
Step 2
In a large frying pan over a medium heat, place the chicken skin side down in a pre-heated pan with extra virgin olive oil or unrefined coconut oil. Do not turn until well browned.
Step 3
When both sides are browned and cooked through, remove the chicken from the pan. Pour off all but 2 tbsp o the remaining oil.
Step 4
Add the onions to the pan and season with salt and pepper.
Step 5
Sauté the onions until almost golden brown.
Step 6
Add the garlic and cook until the onions are golden.
Step 7
Add the lemon slices and sauté for 1 minute.
Step 8
Add the stock and stir.
Step 9
Add the chicken back to the pan.
Step 10
Add the parsley and stir. Check seasoning and serve.
