Instructions

Step 1
Drain and rinse black beans and corn.
Step 2
Dice onion and bell pepper. Cut spinach into ribbons (chiffonade).
Step 3
Brown ground beef, when halfway done, add taco seasoning, black beans, corn, onion, and bell pepper.
Step 4
Add rotel and spinach, cook until limp.
Step 5
Serve on flour tortillas and top with shredded cheese.
