Cook the sticky rice according to package. Dice the cucumber and radish and mix with the pickle ingredients. Leave to sit.

Mix together the poke sauce and cut the tofu into cubes, stir through and leave to sit.

Grate the carrot.

Once rice is cooked, leave to cool slightly and then layer everything in a bowl and enjoy!
