Cauliflower Cheese & Caramalised Onion Pie

Recipe from Matt Wilkinson. There's a few things on the boil at the same time so pace yourself and time it well. **can be made with short crust pastry, just add baking time and use a metal dish for a fully crisp base.

Instructions

Step 1
Preheat oven to 180*C
Step 2
place potato in a medium saucepan and cover with cold water. Bring to the boil over high heat, then reduce to a simmer for 8 mins or until tender. Drain and set aside.
Step 3
Meanwhile, drizzle cauliflower florets in oil and salt & pepper and spread over baking tray. Bake for 25 mins or until golden and just tender. Mash slightly with a fork then set aside with the potato.

increase oven temp to 200*C
Step 5
In a medium saucepan, add milk, cloves and bay leaf. Gently warm over low heat. Remove from heat and set aside.
Step 6
Melt butter in a large heavy based saucepan over medium heat. Add the onion and garlic and cook slowly until it caramelised - about 25 minutes to do it properly.
Step 7
To the onion mixture whisk in the flour and let it cook off for 1 minute.
Step 8
Remove the cloves and bay leaves from the milk, and slowly add the milk into the onion/flour mixture, whisking as you go, removing any clumps, until it is a thick and creamy sauce.
Step 9
Fold in the potato and cauliflower, then taste and adjust seasoning.
Step 10
Pour contents into a casserole dish and place the puff pastry on top. Make a slit in the top for the steam to escape while cooking.
Step 11
egg wash the puff pastry and top with sea salt or MY FAVOURITE, sesame and poppy seeds.
Step 12
bake in over for 15 - 25 mins or until the puff pastry has puffed and is golden.
