Instructions
Step 1
Preparing Pickled Radish: Cut the radish into appropriate sizes, then slice it thinly. Place the thinly sliced radish in a jar or a glass container.
Step 2
Boil 1 cup of water with 1/2 cup of vinegar, 1/2 cup of sugar, and 1 tablespoon of salt. Once it boils, turn off the heat and pour the brine over the sliced radish. Let it cool completely, then store it in the refrigerator for a few hours before serving.
Step 3
Making the Broth: Cut the beef brisket into large pieces and soak them in water for about an hour to remove any blood.
Step 4
After an hour, discard the water and place the beef pieces in a pot. Add about 3 sliced radishes, half a pear, 1 onion, 3 slices of ginger, 10 garlic cloves, 3 green onions, and a little whole black pepper to the pot. Pour around 4 liters of water into the pot and boil it over high heat for about an hour.
Step 5
After an hour, remove the meat and vegetables from the broth. Add 2 tablespoons of soy sauce, 1 tablespoon of salt, and 4 tablespoons of sugar to the broth, then simmer for another minute. Turn off the heat and let the broth cool to room temperature.
Step 6
Once the broth has cooled, add 4 tablespoons of vinegar to it. Adjust the seasoning by adding more sugar, vinegar, or salt according to your taste. Pour the broth into a container and refrigerate it to keep it cold.
Step 7
Preparing the garnish: Cut the cucumber in half lengthwise and slice it thinly. Cut the boiled eggs in half as well. Peel the pear and slice it thinly. Slice the chilled beef brisket thinly.
Step 8
Boiling the Noodles: Boil water and cook the dried cold noodles for about 5 minutes. Stir occasionally while cooking. After 5 minutes, turn off the heat and rinse the noodles thoroughly with cold water.
Step 9
Serving: Place the rinsed noodles for one serving in a bowl and pour the chilled broth over them. Add the prepared toppings (beef brisket, cucumber, pear, pickled radish, and boiled egg) on top of the noodles.
