Instructions

Step 1
Cut the end of the stem off of the cauliflower then place it in a baking dish or cast iron skillet . Rub generously with olive oil garlic and herb salt or regular salt some black pepper and dukkah seasoning . If you haven’t dukkah just use an all purpose seasoning . Pour one cup of vegetable broth into the pan then cover with tin foil and roast 200 c /400 fan for 40 minutes

Step 2
In a separate bowl add grated garlic red pepper flakes salt pepper lemon juice white wine vinegar agave syrup cumin seeds oregano and chopped parsley and mix to combine
Step 3
Take the cauliflower out of the oven pour out the broth then coat in the Chimichurri sauce and bake uncovered for another 20 minutes . If your cauliflower is very big you may need to adjust the time for it to be cooked fully
