Turkey and Sweet Potato Burritos

If you want to spice up your burrito game, these are a great alternative. There are so many unique flavors in this burrito, it will have you craving for more. They are also perfect to make in a big batch and freeze them for later!

1 lbground turkey

1sweet potato
large, cubed

810 inch tortillas

1zucchini
cubed

16 ozchili pinto beans

4 ozcan diced green chilis

½ cupsalsa

¼ cupshredded cheese

⅛ cupcilantro
chopped
Seasoning for Turkey and Sweet Potatoes
Instructions
Step 1
Preheat air fryer to 400 degrees.

Step 2
In a large bowl, seasoning your cubed sweet potato with half of your olive oil, paprika, garlic powder, chili powder, cumin, salt and pepper.








Step 3
Air fry for 10-12 minutes, shaking halfway through.
Step 4
In a large skillet, over medium heat, add your remaining olive oil.

Step 5
Once your skillet is hot, add your ground turkey, chopping it into small pieces.

Step 6
About halfway through cooking your ground turkey, season with remaining paprika, garlic powder, chili powder, cumin, salt, and pepper.






Step 7
Add in your zucchini, chili pinto beans, green chilis, cooked sweet potatoes and salsa. Mix everything together, cover and simmer on low for 10-15 minutes.




Step 8
Grab a tortilla and place a hand full of cheese on one end. Add a scoop of your turkey and sweet potato mixture on top of the cheese. Sprinkle some cilantro and roll it up.



Step 9
Repeat with remaining tortillas and enjoy!
