Instructions

Step 1
In a mortar and pestle or food processor, blend the garlic and Thai chilis together until it is minced.
Step 2
In a pan on medium high heat, sautee the garlic and chili mixture. Once the garlic is slightly toasted, add the ground meat. Stir fry and meat and break up any clumps.
Step 3
Once the meat is about 60% cooked, add the sugar, oyster sauce, and fish sauce. Mix well till the meat is fully cooked. Add the Thai basil, and cook until it has wilted.
Step 4
In a pan with ample oil, fry an egg until the edges are crispy. Carefully spoon hot oil over the whites and yolk to slightly cook the top. It’s ok if it puffs up.
Step 5
Serve the Pad Kra Pao with the fried egg and white rice.
