Homemade Tortillas

Makes 8-16 tortillas depending on the size you prefer. I like to make 10-12.

Melt butter in a large mixing bowl

Add water, salt, and baking powder. Mix.

Sift in both flours.

Mix until a shaggy dough ball forms.
Step 5

Lightly flour your counter or other surface and dump mixture out and knead for 2-3 minutes.
Step 6

Cut into 8 -16 even pieces and roll into balls. Place balls back into mixing bowl and cover with a towel. Let sit for at least 15 minutes up to 1 hour.

Preheat a cast iron or ceramic skillet to medium low with a small dab of avocado oil.

After resting either use a tortilla press or a rolling pin (on a piece of parchment paper) to roll out a thin tortilla.

Immediately Place in the skillet and cook about 30-45 seconds then flip and cook for another 30-45 seconds. Adjust temperature if necessary. While each tortilla is cooking, roll out the next one.

Place the cooked tortilla on a warm plate and cover which a towel while cooking the rest.
