Juicy tomatoes marinated in extra virgin olive oil, balsamic vinegar, basil and garlic. Creamy burrata cheese. Peppery arugula salad. All piled high on a cheesy garlic bread sandwich roll. This sandwich should come with a warning label: she's messy...she'll leave you with garlic breath....but never mind that, take one bite and you'll understand she's worth it!

Instructions

For the marinated tomatoes

Step 1
Slice the tomatoes into rounds.
Step 2
In a dish or large bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, julienned basil, sea salt, pepper and chilli flakes (optional).
Step 3
Add the tomatoes into the marinade and coat all of them evenly. Set aside so all the flavours can meld together while you prepare the other components of the sandwich.

For the cheesy garlic bread roll

Step 4
Preheat oven to 200C/395F.
Step 5
Add the salted butter, extra virgin olive oil, minced garlic and flat leaf parsley into a small frying pan. Bring to simmer. Let the garlic butter simmer over low for 1-2 minutes and remove from heat (be careful not to let the garlic burn).
Step 6
Slice open the large ciabatta roll, or any other large sandwich roll of choice. Spoon the garlic butter onto the interior of both sides and sprinkle on a little shredded parmesan cheese/mozzarella cheese or a mixture of both.
Step 7
Place onto baking tray and bake for about ten minutes or until the bread is crisping up around the edges and the cheese is starting to brown.

For the arugula salad

Step 8
While the garlic bread is baking, get the salad ready. In a medium/large bowl, add in a handful of arugula leaves, a drizzle of extra virgin olive oil, a drizzle of balsamic vinegar. Season to taste with flaky sea salt and fresh cracked pepper. Set aside for assembly.

To assemble

Once the garlic bread is out of the oven, add the arugula salad to the bottom side of the bread. Pile the marinated tomatoes on top of the salad and then add the burrata cheese or mozzarella cheese on top of the tomatoes. Spoon a little of the excess tomato marinade juices/basil on top of the burrata cheese and then place the other side of bread on top.

Enjoy! This sandwich is a messy one and will leave you with garlic breath, but she's totally worth it!
