Instructions
Step 1
In a large bowl, whisk flour, yeast, salt, and sugar. Stir in water until dough forms. Cover bowl and refrigerate 12 to 24 hours
Step 2
3 hours before baking, pour 1/3 cups of oil into a 9x13in metal baking pan. Using a stiff rubber spatula, pull the edges of the dough into the center. Flip dough into an oil pan use fingertips to stretch dough to cover the bottom of the pan. Cover pan and let rise 2-3 hours, until doubled.
Step 3
Preheat oven to 475. Uncover dough and coat fingertips with oil. Dimple dough all over by inserting splayed out fingers into dough. Drizzle 2 Tbsp of oil on top of dough and sprinkle with salt.
Step 4
Bake on bottom rack of oven until deep golden brown, 25-35 min. Let cool 5 minutes and remove from pan with offset spatula. Cool for 5 minutes and serve.
