This is my easy stone fruit cobbler made combining peaches and nectarines with hint of coconut sugar and cinnamon and topped with the perfect soft and crispy cobbler topping! Vegan and gluten free :)

Peach & Nectarine Filling

8peaches
peeled and sliced into 1 in pieces

nectarines

2 Tbspcoconut sugar

½ tspcinnamon

2 tsplemon juice

2 Tbsparrowroot starch
Cobbler Topping:
Instructions
Step 1
Peel and slice peaches and nectarines and add them to a large bowl.
Step 2
Then add in the rest of the filling ingredients and mix until peaches are well coated.
Step 3
Place them into a pie dish, using the back of a spoon to push them down a little.
Step 4
Into a food processor, combine all ingredients for your cobbler topping.
Step 5
Pulse the food processor until it comes together and forms a ball of dough.
Step 6
Place the dough into the refrigerator for about 10-15 minutes.
Step 7
Then crumble the dough onto the filling, covering it but leaving a few holes where you can see the filling.
Step 8
Bake at 350F for 40-50 mins until crust starts to become slightly golden.
Step 9
Enjoy with vanilla ice cream and some fresh basil or mint.
