Step 1
In a large saucepan, cook the onion and garlic until soft. Add tomato puree and cook until it darkens / caramelises a bit.
Step 2
Cook pasta and save 1/4 of the water.
Step 3
Add cream, vodka, chili flakes and 1/4 of the pasta water, and stir until combined. Season and remove from heat. Add butter and parmesan.
