Instructions
Step 1
In a large saucepan: heat olive oil, garlic, and shallot. Cook until soft.
Step 2
Add tomato paste and cook until it darkens/caramelized
Step 3
Add in the heavy cream, then add vodka and cook until it evaporates
Step 4
Add red pepper flakes, salt and pepper and remove from heat
Step 5
Start to cook pasta & once pasta is done, save ½ cup of pasta water
Step 6
Add in butter & stir over medium heat
Step 7
Add pasta & pasta water then add parmesan and stir. Add more salt and pepper to taste if needed and top with parmesan and fresh basil & serve!
