A traditional Irish dish, recipe from my grandfather. Cottage Pie is beef and vegetables, Shepherds pie refers to the dish when using lamb.

Ingredients
8 servings
1 Poundground beef
good quality, or high protein fake beef
1 cupdry lentils
soak before cooking, This is optional, however i use it to stretch the beef but add protein, If you like peas in your cottage pie this tastes similar but with a better texture
8 ouncesmushrooms
diced, baby bella or portabella is best
1 ½ cuponion
diced
1 ½ cupstalks of celery
large, diced
1 ½ cupcarrots
large, diced, skin on is fine
2 cupsbeef bone broth
ale
3 Tbsptomato paste
1 Tbspworcestershire sauce
1 Tbsprosemary leaves
1 Tbspthyme leaves
½ tspsalt
3russet potatoes
large, hand sized, Yukon, yellow, or baking, peeled and cut into 1-2inch chunks
½ cupshredded parmesan cheese
4 Tbspbutter
⅓ cupmilk
to make the potatoes desired fluffiness
2 cupgreen onions
sliced
Instructions
Step 1
Prep potatoes and boil in a med. pot until fork tender (~30min).
Step 2
While waiting on potatoes, brown beef in a large pot. Drain if desired and then add diced carrots, celery, onions, and mushrooms to the pot ( I cut and add as I go, in that order).
Step 3
Add Worcestershire, tomato paste, salt, rosemary, thyme and beef stock or ale. Preheat oven to 400°. Reduce heat to low on beef and vegetable mix, allow to thicken, stirring occasionally.
Step 4
Once potatoes are done, drain and mash. Then the same pot add butter and milk, mix until fluffy.
Step 5
Transfer meat layer into 9 x 11 inch pan, spread evenly, then top with potatoes. Bake until potato browns, ~ 30min. Remove and top with sliced green onions.
