Fiber Filled Meatballs

Dietary recommendations have been telling us for a while. That we should be eating less animal protein and more plant-based foods. Make it an easy transition with these meatballs. They contain 50% Beef so your family is still going to love them. This recipe fits perfectly if you're following the mind diet, the dash diet or a mediterranean diet pattern.

Instructions

Step 1
Prep ingredients ahead of time to save time.
Step 2
Note black beans should Be mashed before mixing in with the ground beef. You can accomplish this either with a potato smasher or even just the times of a fork.
Step 3
After you prop all ingredients, mix all ingredients together in a large bowl.
Step 4
Use a cookie scoop or your hands to make rounded balls. This recipe will yield 12-14 depending on the size. Set aside.
Step 5
Over medium heat heat, 2 tbsp of canola oil in a large pan. Once heated place shaped meatballs in the pan and cook, rotating every so often until heated through.
