Step 1
Wash the rice until the water runs clear then add to a large pot with water coconut milk agave syrup a large pinch of salt and the zest of a large lime or 2 small limes

Step 2
Heat the pot on high heat until it starts to boil then lower the heat cover the pot with the lid and cook on low heat 12-15 minutes
Step 3
Refresh the peas with some boiling water then strain and rinse under cold water

Step 4
Toast the coconut chips on a dry pan until they are slightly golden

Step 5
Take the rice off the heat let the steam come out then fluff up the rice and add the peas . Serve topped with the delicious toasted coconut and enjoy
