Double chocolate muffins

Batter: 1 cup sugar 2 eggs, room temp 1 tsp vanilla extract 1/2 cup vegetable oil 1/2 cup whole milk 1/3 cup yogurt 2 cups flour 1 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1 tsp espresso powder (optional) 1/2 cup cocoa powder + 1/2 cup hot water 2 cups chocolate chips + 1 tbsp flour 1. Heat oven to 375°F and line a muffin tray with muffin liners. 2. Whisk together sugar, eggs, vanilla, vegetable oil, milk, and yogurt. 3. Then, fold in the flour, baking soda, baking powder, and salt. 4. In a small bowl, whisk together the cocoa powder, espresso powder (if using), and hot water until combined. Fold the mixture into the batter. 5. Toss the chocolate chips with flour and gently mix until coated. Fold the chocolate chips into the batter. 6. Spoon 3-4 tbsp of batter into the muffin tins.
