Instructions
Step 1
sear short ribs in a very hot pan. then remove
Step 2
in same pan, saute onion, carrot and celery, untill soft
Step 3
add garlic
Step 4
add tomatoe pure, cook for a few minutes
Step 5
add shortribs, wine, beef stock canned tomatoes, bring to boil and reduce to simmer. add spices
Step 6
simmer for a few hours, untill short ribs are very soft
Step 7
remove short ribs and shred, return to pan. discard bones
Step 8
separate 1/3 to 1/2 of sauce and use immersion blender, not too much
Step 9
blend all together
Step 10
toss part of the sauce with pasta and some pasta water and parmiggiano.
