Potato salad with charred tomato and orange salsa

Step 1
Heat oven to 180C
Step 2
Mix the seeds with 1 tbsp olive oil, 2 tsp cumin and 2 tbsp maple syrup with a pinch of salt. Lay out on a tray and bake in the oven for 15 mins

Turn oven to high grill setting
Step 4
Grill tomatoes and chilli's for 16 mins
Step 5
Boil potatoes in large pan. Add plenty of salt and simmer for 8 minutes
Step 6
Drain well, return to the pan and coat with 2 tbsp oil and lime juice
Step 7
Chop the charred chillies and tomatoes to a salsa consistency
Step 8
Add half the salsa to the potatoes pan. Grill the other half for 8 minutes until it starts to brown.
Step 9
Mix all together and serve with pumpkin seeds on top
