Creamy miso udon is a delicious twist on traditional alfredo sauce. Made with miso paste, butter, heavy cream, garlic, and Parmesan cheese, this sauce has a rich umami flavor and a slightly nutty taste. It's perfect for pasta dishes or as a sauce for vegetables. My secret ingredient in this is a bit of honey! The honey balances the saltiness and richness from the miso paste and heavy cream resulting in a barely detectable sweetness. You can omit the honey if you don’t like it but I encourage you to try it first ☺️

Instructions
To cook your udon noodles,
Step 1
Boil a pot of water.
Step 2
Add the udon noodles and cook for 60 seconds.
Step 3
Drain and set aside. Reserve some of the boiling liquid for later (if you need to loosen your sauce).
To make miso alfredo,
Step 4
Melt butter over medium low heat.
Step 5
Add the onions and sauté until the onions are translucent.
Step 6
Add the minced garlic and sauté for 60 seconds or until fragrant.
Step 7
Add black pepper and sauté for 20 seconds.
Step 8
Add heavy cream and whisk in the miso paste until the sauce is smooth.
Step 9
Add the parmesan cheese and mix until it has completely melted. The sauce should be smooth and thick.
Step 10
Season with a bit of soy sauce, honey and black pepper. Depending on the miso paste that you use (some are more salty than others), adjust the soy sauce as needed. You only need 1/2 tsp of honey to balance the saltiness from the miso paste and parmesan cheese.
Step 11
Toss in your cooked udon noodles and let it cook in the sauce for 2 mins over medium low heat. Add some of the boiling liquid (from cooking your udon earlier) to loosen the sauce as needed.
Step 12
Garnish with extra parmesan cheese and green onions.
