Instructions
Step 1
On a medium high heat, melt a small knob of butter and fry half the chicken livers for 90 seconds on each side. Remove and repeat with the remaining livers.
Step 2
Transfer the cooked livers to a blender and add the melted butter, cream, brandy, and a generous amount of salt and pepper.
Step 3
Pulse the blender until you achieve the desired consistency. You can add more or less cream/butter if you wish.
Step 4
Divide mixture into containers and refrigerate for 1 hour.
Step 5
Melt approx 20g of butter and pour a thin layer on top of each container. Place back in the fridge or straight into the freezer.
Step 6
Enjoy on crackers, bagels or bog standard bread!
