I love this as a somewhat healthier option to the original. The batch is great for chipping away at through the week with quesadillas, breakfast sandwiches, scrambles, soups and more!

Step 1
If your grinding your own chicken thighs, go ahead and do that set to the side. If buying chicken just don’t buy all white meat or it will really dry out. Combine all of your spices and work it into your mince with your hands very thoroughly. You’re all set! Just put a little olive oil in a medium high pan and brown it up. I make a few patties so I can use them for breakfast sandwiches. But the rest I leave loose for quesadillas and scrambles. Makes for an amazing ingredient in soups too!
