Instructions
Step 1
Heat 1 teaspoon of the oil in a non-stick skillet over medium-high heat. Add the green onion and spinach and cook, stirring, for 2 minutes or until the green onion softens and the spinach wilts. Season with pepper and transfer to a bowl.
Step 2
Heat the remaining 1 teaspoon of the oil in the same skillet over medium-high heat. Combine the whisked eggs and egg whites. Pour in the egg, swirling the pan to shape into a large round omelet (about 8-inches). Cook, untouched, for 2 minutes or until the egg has set around the edges but is still slightly wet at the centre. Spoon the spinach mixture along the center of the egg. Top with the feta, mint and basil. Gently fold half of the egg over to enclose the filling and form an omelet.
Step 3
Gently slide the omelet out onto a plate and serve.
