Instructions
Step 1
Preheat oven to 350Β°F. Line a 9β³x9β³ baking pan with parchment paper and set aside.
Step 2
In a standing mixer fitted with a paddle attachment, cream the butter and sugars until light and fluffy, about 3 minutes. Beat in the egg and vanilla extract for an additional minute.
Step 3
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. With the wet ingredients mixing on low speed, slowly incorporate in the dry ingredients until almost combined. Remove from mixer and fold in oats and chocolate with a spatula.
Step 4
Spread the dough into the prepared pan. Bake for 30 minutes, or until a knife comes out clean when inserted into the center of the bars. Allow to cool on cooling rack before serving!
