Instructions

Step 1
Preheat oven to 425 degrees.
Step 2
In a cast-iron skillet, heat olive oil until it shimmers. Add the garlic (and the red pepper flakes, if using) and sauté until fragrant or until well-fried.
Step 3
Pour in the beans. Add salt, pepper, and zaatar and stir. Let cook for 2-5 minutes.
Step 4
(Optional) mash or partially mash beans with spatula, spoon, or masher.
Step 5
Arrange spinach on top of beans, then immediately pour tomato in an even layer across the skillet. Sprinkle cheese across the top, making sure to leave some areas not fully covered so steam can escape and tomato juices can reduce.
Step 6
Put the skillet into the oven and bake until cheese is melted (or until cheese is lightly browned, depending on preference).
Step 7
Serve immediately from the skillet with bread or dipping vegetables.
