Step 1
Boil eggs 8 minutes, then place in bowl of cold water to cool off.
Step 2
Boil potatoes in pot for 30 minutes. Then add peeled carrots and boil an additional 10-15 minutes until tender.
Step 3
Allow to cool, then peel and dice potatoes small. Dice carrots small.
