Step 1
1. Prepare dressing by adding all ingredients to a blender and blend until smooth. Place in refrigerator to let the flavors marry.
Step 2
2. Melt 1 tbsp oil and 1 tbsp honey in a frying pan over medium heat. Add peaches and let cook for 1-2 minutes, then flip and let cook an additional 1-2 minutes. Remove peaches from pan and then toss on a hot grill for grill marks – about a minute each side. Then remove from heat and set aside

3. Assemble the salad by adding the arugula, mint (prefer course chopped but could use whole leaves), and peas to a large bowl. Toss with dressing. Add diced cucumber, chopped green onion, micro greens and pistachios to the top if desired.

4. Serve salad with grilled peaches and burrata

**Note – carry this summer salad into winter by using pears in fall/winter instead of peaches
