Ingredients
4 servings
10 ouncecheese tortellini
package
2 cupszucchini
grilled and diced, approx 3 zucchini
2 cupscannellini beans
or white, rinsed and drained
1 cupcherry tomatoes
halved
¼ cupshredded parmesan cheese
kosher salt
to taste
fresh ground black pepper
to taste
¼ cupfresh basil leaves
lightly packed
1 ½ tablespoonswhite wine vinegar
1 tablespoonolive oil
1 tablespoonhoney
1 tablespoonwater
1 teaspoondijon mustard
½ teaspoonminced garlic
kosher salt
to taste
fresh ground black pepper
to taste
Instructions
Step 1
Put all of the ingredients for the vinaigrette in a blender and blend until smooth. Taste for seasoning and set aside.
Step 2
Cook the tortellini according to package instructions. Rinse under cold water, drain and place into a serving bowl.
Step 3
Add in the remaining ingredients along with the basil vinaigrette and toss together until coated. Taste for seasoning then serve immediately or cover and refrigerate until ready to serve.
