Step 1
Cook the onions and garlic in olive oil, add the tomato paste and then the chopped tomatoes. Salt and pepper to taste
Step 2
Soak the quinoa and boil in salted water.
Step 3
Chop the veggies, parsley and mint.
Step 4
Leave sauce and quinoa to cool to room temperature, then combine veggies with quinoa, and tomato sauce.
Step 5
Add lemon juice to the salad, alongside chilli pepper flakes and salt.
