Instructions
Step 1
Combine the onion, potatoes, corn, bacon, salt, garlic powder, and broth in the Instant Pot. Stir to incorporate the ingredients. Place the lid on the Instant Pot, turn the valve to Sealing, and set the cook time for 5 minutes on high pressure.
Step 2
When the cook time is complete, quick release the pressure
Step 3
Whisk together the milk and cornstarch, then pour the mixture into the soup and stir. Turn the Instant Pot back on to Sauté, and heat the soup for about 5 minutes until the soup thickens slightly. Add the cheddar cheese and stir until melted
Step 4
If you like, serve the soup with additional shredded cheddar cheese and chopped
bacon.
