Step 1
Cut sweet potato into half inch thick slices. Air fry at 350 for 20 minutes, flipping half way through.
Step 2
Cut and mash avocado.
Step 3
Wash and prep spinach
Step 4
Assemble sandwich! Spread mashed avocado on one slice of bread and goat cheese on the other. Sprinkle salt and pepper on the avocado side. Lay down the spinach. Drizzle with olive oil and balsamic reduction. Add the sweet potato!
