Ingredients
2 servings

1 tablespoonolive oil

2Eggs

½ cupspinach

½ cupmushrooms

¼ cuppeppers
chopped

2 tablespoonsonions
chopped

2 tablespoonsvegan ricotta
Sweet Potato Hash
Instructions
Step 1
Add olive oil to pan over medium heat
Step 2
Scramble eggs and set aside
Step 3
Add peppers and onions to the pan, stir occasionally and allow to soften
Step 4
Add mushrooms and spinach, stir occasionally and allow to soften as well
Step 5
Add scrambled eggs and kite hill cheese, stir until desired doneness is reached
Step 6
Serve topped with fresh herbs
Step 7
Optional: serve with a side of fresh fruit
Sweet Potato Hash

Add olive oil to a pan over medium heat
Step 9
Add the potatoes and onion and sprinkle with salt and pepper to taste and stir
Step 10
Cover & cook for 15-20 minutes, stirring occasionally until potatoes are tender
Step 11
Turn the heat to high and cook for an additional 5 minutes to brown the potatoes.
