Easy slow cooked massaman curry. NOTES: 3.5hrs on high is too short for the beef to be tender. Recommend 7hrs on low if possible for the beef to be fall apart tender.

Instructions

Step 1
Chop onion, carrots and potatoes into smallish cubes

Season meat well with salt and pepper

Sear beef whole so it's nicely browned but not cooked

Add meat to slow cooker and dump onion, carrot, and potatoes on top

Pour sauce over meat and veg in the slow cooker
Step 6
Cook on high for 3.5hrs, low for 7hrs
Step 7
In the final 15 minutes, add 100g baby spinach to allow to wilt into the sauce
Step 8
Serve with a sprinkle of chopped peanuts and extra veggies like green beans or cauliflower rice

Add coconut milk and curry paste to a bowl, combine well
