Healthier Slow-Cooker Butter Chicken

Ingredients
4 servings
1 x 14 ozcan full fat coconut milk
plus more if needed
¾ cupplain greek yogurt
6 ozcan tomato paste
1 teaspoonred curry paste
0.5sweet onion
finely minced
4garlic cloves
minced or grated
1 inchfresh ginger
knob, peeled and grated
2 tablespoonsgaram masala
1 teaspoonpaprika
½ teaspoonground turmeric
½ teaspooncayenne
¼ teaspoonkosher salt
1 poundboneless skinless chicken breast
cut into bite-sized pieces
2 tablespoonssalted butter
2 tablespoonsfresh lemon juice
freshly ground black pepper
for serving
Instructions
Step 1
in a slow cooker, stir together the coconut milk, yogurt, tomato paste, curry paste, onion, garlic, ginger, garam masala, paprika, turmeric, cayenne, and salt until smooth
Step 2
add chicken and stir to coat, add the butter
Step 3
cover and cook on high for 4 hours or low for 6 to 8 hours, optionally stir once or twice during cooking
Step 4
stir in lemon juice, taste and season with salt and black pepper as needed
