1. Prepare the poolish and let it sit at room temperature for 1h.

Store the poolish in the fridge overnight.

2. The next morning, mix all the dough ingredients except butter until it is strong and fairly elastic.

3. Cut the butter into small cubes and add to the dough gradually and knead until window-pane.

4. Divide the dough into 3 portions and roll it into balls.

Rest for 15min.

Shape the dough into a sandwich loaf and place it in a loaf tin.

5. Proof until the dough reaches ~ 80-90% tin height.

Put on the tin lid (optional)

6. Bake for 185C for ~ 33mins.

7. Let the bread cool for at least 30 minutes before slicing.
