Step 1
Remove the yellow parts of guanciale and cut it into cubes or strips. Grate the pecorino cheese and grana padano to a large bowl.
Step 2
In a pan over medium heat, fry the guanciale until crispy. Drain the guanciale fat into a container to later add it to the egg/cheese mixture.
Step 3
In a pot with boiling water (lightly salted), cook the spaghetti according to package
Step 4
Add the egg, yolks, and black pepper to the bowl with the cheese mix. Whisk, by adding a little of guanciale fat and some pasta water, until you obtain an homogenous cream.

Step 5
With the heat off, add the pasta to the guanciale pan along with the egg/cheese mix. Add more pasta water if necessary.
