Instructions

Step 1
Finely dice the guanciale and add to a dry pan.
Step 2
Fry on medium heat and fry until crisp and the fat renders.
Step 3
In a bowl, whisk the eggs, yolks and have the cheese with salt and pepper.
Step 4
While whisking, pour the slightly cooled fat into the eggs until silky.
Step 5
Cook the pasta in generously salted water until al dente. Reserve a cup of pasta cooking water.
Step 6
Drain pasta and add it back to the pot, gradually add in egg mixture while continually stirring.
Step 7
Pour in some pasta water to bring the sauce together along with the rest of the cheese.
Step 8
Serve immediately.
