Instructions
Step 1
Fill a pizza pan with halved tomatoes, then drizzle on olive oil and salt and roast in oven at 400° for 20-25 min
Step 2
Meanwhile, chop two onions and two celery stalks, the garlic, and a pinch of salt and sauté with butter in a stew pot
Step 3
Add the tomato paste and a pinch of sugar, stir, then a remove the tomatoes from the oven and add to the pot. Add chicken stock, then bring to a simmer.
Step 4
Let the stew simmer for a while, then add cream and a tbs of pesto and use a stick blender to blend into a purée.
Step 5
Serve with a drizzle of olive oil and a sprig of basil, and a grilled cheese of course.
