Instructions

Step 1
Preheat oven to 400°f, line a baking sheet w/parchment. 2. Drizzle cut side of squash w/olive oil. Place cut side down on the baking sheet, bake 45 minutes, or until soft. Reduce heat to 375°. 3. Remove from the oven. Use a fork to shred the squash. Add spices and Parmesan. 4. Spray muffin pan w/cooking spray, fill each cavity with 1/4 cup squash, pressing down to create cups. Bake 15 minutes. 5. Spoon marinara into each cup, top w/mozzarella, and pepperoni. Bake 8-10 minutes. 6. Top w/parsley, serve
