Instructions
Step 1
Cook the oven chips according to packet instructions - until golden + crisp.
Step 2
Make the pesto hummus (see previous recipe).
Step 3
To make the slaw, grate the carrot, slice the cabbage + onion, then mix with mayo, lemon juice, salt + pepper.
Step 4
Slice the mushrooms, and dry fry in a hot pan with a pinch of salt to release excess moisture.
Step 5
Add the oil + fry until golden. Turn down the heat, then add minced garlic, oregano, paprika - fry until fragrant.
Step 6
Season the chips with salt, pepper, oregano, garlic powder + paprika.
Step 7
Slice the tomatoes, toast the wraps, then assemble - pesto hummus, tomatoes, slaw, mushrooms, chips & more hummus - enjoy!
