large, chopped, better if you remove the skin but not essential

chopped, deseeded if you don’t like it very hot

2 Tbsptamarind paste

1 tsphot chilli powder

2 tspground coriander

2 Tbspoil
or ghee, or a mixture of oil and unsalted butter

½ tspcumin seeds

8garlic cloves
sliced

3dried chillies
i use kashmiri, roughly broken

12curry leaves
fresh or frozen, optional
