SIX INGREDIENT CURRIED COCONUT UDON 🍜 . Welcome back to my series of six ingredient vegan recipes, where the only ingredients I presume you have in the cupboard are oil, salt & pepper! . I looove udon noodles, and these are perfect in this rainy miserable weather 🙃 you could sub out tofu for any protein of your choice and could swap out sugarsnaps for any other veggies🫶 . Ingredients (serves 2) - 1 block extra firm tofu - 2 portions of udon noodles - Handful if sugarsnap peas (or other veggies of your choice) - 3 large cloves of garlic - 2.5 tbsp curry powder - 1 tin of coconut milk (I used ‘light’ coconut milk as it’s a bit more watery so I find it easier to simmer the noodles!) . Instructions
Step 1
1. Break tofu into cubes and fry until crispy
Step 2
2. Add vegetables + garlic into the pan leaving them to cook for a few minutes
Step 3
3. Add curry powder into the pan and fry for a for a few minutes
Step 4
4. Add coconut milk & udon noddles. Cover the pan with a lid and simmer until the noodles have cooked
Step 5
5. Add any seasonings of choice and serve!
