Instructions
Step 1
Cut the chicken breasts in half lengthways to make 4 thinner fillets
Step 2
Season flour with salt & pepper, then coat each piece of chicken
Step 3
Heat the cooking oil and butter in a large frying pan over a mdeium heat. Pan fry the chicken until it is goldne brown on both sides
Step 4
Remove the chicken from the pan and set it aside. Now turn the heat down to a medium heat, add the diced onion into the same pan and cook for about 5 mins until it starts to soften.
Step 5
Add the garlic and cook for a further minute
Step 6
Pour in the chicken stock, add the honey and mustard. Bring it to the boil.
Step 7
Pour the cream and get then chicken back into the pan. Give it a stir.
Step 8
Cook it for a few minutes, storring occassionally until the sauce thckens.
Step 9
Add in the chopped parlsey, then taste for seasoning. Dish it up and enjoy
