Moroccan-Spiced Lamb Tagine

Instructions
Step 1
Heat oil in pan. Fry onion and garlic for 2-3 mins. Add spices, carrots and sweet potato and heat through.
Step 2
Turn up heat to high and sear lamb pieces, turning to brown on all sides.
Step 3
Cover with stock and add apricots and bay leaf. Bring to boil, turn heat down to low and place a tightly fitting lid on to let it simmer away gently for 1 hour.
Step 4
Whisk yogurt, lime juice and half coriander leaves.
Step 5
Serve Tagine with rice. Top with yogurt and sprinkle over coriander and pomegranates seeds.
