Step 1
Cook tater tots. I use the air fryer because it's faster, but you can bake it, too.

Scramble and season tofu

Step 3
Assemble. Put some queso as a base. Press tater tots flat on top of the queso. Add tofu scramble over top. Add cheese over everything and roll.
