Step 1
1. Roast the tomatoes, garlic cloves, serrano peppers, and 1/2 onion using your preferred method. (Air fry at 375° F for 10 minutes)

2. Chop the remainder of the onion.
Step 3
3. Once roasted, blend well with 1/3 cup water and chicken bouillon (or salt) to taste. (This salsa is good for 4 servings)

4. Grease a pan with avocado oil spray and add the salsa. Warm it on low heat while you continue cooking.

5. Finely chop the remainder of the onion.

6. Mix 1/3 c egg whites, 1 egg, salt, and pepper to taste.

7. In a greased pan, cook on low heat and put to the side.

8. Warm up 4 tortillas on a comal.
Step 9
9. Dip the tortillas in the salsa and evenly add the scrambled eggs (optionally onion as well) into the 4 tortillas.
Step 10
10. Top with about 1/4 cup of salsa, 21 G queso fresco, 30 grams non fat Greek yogurt, and more onion.
